Magic Cake

This is by far one of my favourite cakes ever!  It is nice and light and just perfect with a hot chocolate or Milo on these rainy overcast days we have been having here for ...oh... the last few months! :(

This recipe comes form one of my lovely visiting teachers and is her trade mark cake (no one can make them as good as her!).    I have been lucky enough to have been given two of them from her :).

 It is called the 'Magic Cake' because she made it for a family from church who was sick and she called to see if they wanted a meal but was told that they had tea sorted.  So when the family had had tea their youngest child asked "whats for desert?" Just as the doorbell rang with a cake for desert like 'magic' :)  But I think it can also be called the 'Magic Cake' because it just tastes sooooo good!

Okay here is the recipe:
Ingredients:
3 tablespoons plain flour
3/4 cup SR flour
1/2 cup caster sugar
1 egg lightly beaten
1/2 teaspoon vanilla essence (more if desired)
60g butter or margarine
1/2 cup milk

Method:
Cream sugar and butter
Add vanilla essence and egg.  Mix until smooth
Sift in 1/2 the flour and add 1/2 the milk.  Mix together
Add remaining sifted flour and milk and mix to combine.
Place in a lined cake tin
Bake at 180 degrees Celsius for 25- 30 mins (until skewer comes out clean)
put on cooling rack

Topping:
Cinnamon Sugar 
1/2 teaspoon of ground Cinnamon
1 tablespoon of caster sugar (add more if desired)
Mix together and sprinkle over the cake as soon as it comes out of the oven.
